  2. GLAZED ALMOND BRIE

  6. 1 3/4 oz Wheel imported Brie cheese

  7. - well chilled

  8. 2 tb Confectioners' sugar

  9. 1/2 c Sliced unblanched almonds

  10. Red & green seedless grapes

  11. - in clusters, for garnish

  12. WITH A SMALL, flexible knife, cut away rind from top

  13. of chilled cheese. Be careful not to remove or split

  14. the rind on the sides. It will form a wall for the

  15. melted cheese. Sift 1 tablespoon of confectioners'

  16. sugar evenly over the surface and arrange almonds on

  17. top, pressing gently into place. The cheese can be

  18. prepared to this point as many as 2 days in advance.

  19. Cover loosely with foil and refrigerate. Bring to room

  20. temperature before heating, place rack 6 inches from

  21. heat source and preheat the broiler. Line large baking

  22. sheet with aluminum foil, place cheese on it and sift

  23. 1 tablespoon of confectioners' sugar over nuts. Broil

  24. 1 to

  25. minutes. Rotate cheese, if necessary, for even

  26. browning. Watch carefully so it does not burn. Use

  27. foil to lift cheese and transfer it to serving

  28. platter. Tear foil and gently remove it. Garnish with

  29. clusters of grapes. Volume I of Abby Mandel's
