  1. 1/2 cup chopped radishes (6 - 10, depending on size) -

  2. 1/4 cup butter -

  3. 1 tablespoon chopped fresh herbs or lemon zest salt

  1. Wash, but don't peel, the radishes. Chop them medium-fine. Mash butter with herbs and/or zest, if using. Add cut-up radishes, mix well. Add salt to taste. Spread on crusty, preferably whole grain, bread.
