  1. Icelandic Vinarterta

  2. 1/2 pound butter

  3. 1 1/4 cups white sugar

  4. 3 eggs

  5. 1/4 cup milk (more if needed)

  6. 1 tsp ground cardamon seed

  7. 4 cups flour

  8. 3 tsp baking powder

  9. Cream butter well. Add sugar gradually, then eggs. Beat until

  10. creamy. Add milk, then dry ingredients. Divide into 5 or 6 equal

  11. parts. Roll out on floured surface. Use a large plate turned

  12. upside down for a guide, and cut with a sharp knife around plate.

  13. 375 until light brown, about minutes. Remove from pan while hot. Put prune filling between

  14. layers. Ice with butter icing to which you've added 3/4 tsp almond

  15. flavoring. Ice top of cake only.

  16. PRUNE FILLING

  17. 1 pound prunes

  18. 1/2 cup white sugar

  19. pinch cloves

  20. Put prunes in pot and cover with cold water. Bring to a boil and then turn heat off. When cool, put prunes through food chopper.

  21. Add the sugar and cloves. Stir well. Vinarterta usually improves with age. The pastry must be allowed

  22. to soften from the moisture in the filling. Wrap in tinfoil and refrigerate or freeze.
