  1. Autumn Cheesecake

  2. Servings: 10

  3. 1 cup graham cracker crumbs

  4. 16 oz cream cheese, Softened

  5. 2 large eggs

  6. 4 cup thinly sliced peeled apples

  7. 1/2 tsp cinnamon

  8. 3 Tbsp sugar

  9. 1/4 cup margarine, melted

  10. 1/2 cup sugar

  11. 1/2 tsp vanilla

  12. 1/3 cup sugar

  13. 1/4 cup chopped pecans

  14. Combine crumbs, sugar, cinnamon and margarine, press onto bottom

  15. 9-inch springform pan. Bake at

  16. 350 degrees F.,

  17. 10 minutes.

  18. Combine cream cheese and sugar, mixing at medium speed on electric

  19. mixer, until well blended. Add eggs, one at a time, mixing well

  20. after each addition. Blend in vanilla, pour over crust. Toss

  21. apples with combined sugar and cinnamon. Spoon apple mixture over

  22. cream cheese layer; sprinkle with pecans. Bake at 350 degrees F.,

  23. 1 hour and 10 minutes. Loosen cake from rim of pan; cool before

  24. removing rim of pan. Chill.

  25. VARIATION:

  26. Add 1/2 cup finely chopped pecans with crumbs for crust. Continue

  27. as directed.
