  1. 1/2 cup margarine -- solid

  2. 1/2 cup sugar

  3. 1/2 cup packed light brown sugar

  4. 2 eggs

  5. 1 3/4 cups all-purpose flour

  6. 1 tablespoon baking powder

  7. 1/4 teaspoon salt

  8. 1/2 cup brewed coffee -- strong

  9. 1/3 cup milk

  10. 2 teaspoons vanilla extract

  11. 1/2 cup black walnuts -- chopped

  12. 3/4 cup dried coconut

  13. 1/4 teaspoon almond extract -- optional

  14. 1. Grease and flour 12 muffin cups, or use paper liners.

  15. 2. Use a large electric mixer bowl. Cream the margarine, sugar and brown

  16. sugar until very light and fluffy. Beat in the eggs one at a time. 3. Sift the flour, baking powder and salt.

  17. 4. Combine the coffee, milk, vanilla and almond extract.

  18. 5. Alternately blend the coffee mixture and the flour mixture into the

  19. 12 muffin cups. Bake in a preheated 375-degree oven for 25-35 minutes or until a toothpick inserted in center comes out clean.

  20. 6. Cool

  21. 5 minutes on rack and remove from muffin tins and cool longer

  22. before enjoying with your coffee or tea.
