  1. 2 cups 474ml Idaho potatoes (large)

  2. 4 Bacon - cut into quarters

  3. 1/2 cup 31g / 1.1oz Chopped green onions

  4. 2 tablespoons 30ml Grated Parmesan cheese

  5. 1/2 cup 118ml Sour cream

  6. 1/2 teaspoon 2 1/2ml Salt

  7. 1/2 teaspoon 2 1/2ml Freshly-ground white pepper

  8. Butter

  9. Paprika

  1. Scrub potatoes and bake 1 hour at 400 degrees.

  2. Grill bacon pieces until crisp. Drain off bacon fat except 3 tablespoons. Add green onions and saute slowly.

  3. Cut potatoes in half lengthwise and scoop out the inside into a skillet, taking care to retain shells intact. Add cheese, sour cream, and salt and pepper to potato, green onions and bacon, mixing and mashing to blend thoroughly. Return the skillet to low heat and heat through.

  4. Stuff mixture into potato skins. Drizzle with melted butter, and sprinkle with paprika. Bake 15 to 20 minutes at 350 degrees.

  5. This recipe yields 4 servings.
