  1. Banana And Mango Chutney

  2. 3/4 cup cider vinegar

  3. 3/4 cup firmly packed brown sugar

  4. 2 teaspoons Madras curry powder

  5. 1 teaspoon ground black pepper

  6. 1/2 teaspoon salt

  7. 1/2 teaspoon ground cinnamon

  8. 1/4 teaspoon ground white pepper

  9. 1/8 teaspoon ground red pepper

  10. 1/4 teaspoon minced garlic

  11. 6 medium bananas, sliced, divided

  12. 1 jar mango slices, divided

  13. 1/4 cup raisins

  14. Combine vinegar, sugar, curry powder, all three peppers, salt,

  15. cinnamon and minced garlic in a 4-quart non-reactive saucepan. Heat

  16. 1 minute. Peel

  17. 4 bananas, slice

  18. and add to saucepan. Add 1 cup diced mangoes. Heat fruit mixture

  19. and simmer, uncovered, 10 minutes, stirring occasionally until

  20. mixture thickens. Slice and add remaining bananas to chutney. Add

  21. remaining diced mangoes and raisins. Stir to mix well, remove from

  22. heat, cover and let stand 30 minutes. Serve hot or cold with curries

  23. or as a condiment with meat, fish or poultry dishes.
