  1. INGREDIENTS:

  2. 1 cup Yellow split mung beans

  3. 2/3 cup Finely chopepd onions

  4. 1 tablespoon Grated ginger

  5. 2 teaspoons Minced garlic

  6. 1/3 teaspoon Turmeric

  7. 3 medium Potatoes, peeled - quartered

  8. 1/3 small Head cauliflower cut into - - florets

  9. 1 teaspoon Salt

  10. Cooking spray

  11. 1 teaspoon Cumin seeds

  12. 2 Green chilies - seeded. shred

  13. 1/2 teaspoon Red pepper

  14. 2 teaspoons Lemon juice

  15. 2 tablespoons Chopped coriander leaves

  16. DIRECTIONS:

  17. Wash mung beans. Put in a deep pot with onions, ginger, garlic, turmeric &

  18. 3 cups water. Bring to a boil & simmer for 15 minutes.

  19. 2 cups water. Cook for minutes.

  20. Spray non-stick fry pain. When very hot, add cumin seeds & fry till they

  21. turn dark brown. Add chilies & red pepper & stir briefly. Pour contents

  22. into the stew. Add lemon juice & coriander leaves. Mix well.

  23. Serve with plain cooked rice.
