1 cup whipping cream

2 ounces white chocolate -- chopped

Bring cream to simmer in heavy small saucepan. Remove from heat. Add white choc

olate and stir until smooth. Pour into bowl. Cool completely, stirring occasion

ally. Refrigerate until well chlled, stirring occasionally. Using electric mixe

r, beat white chocolate cream until stiff. Makes 2 cups
