  1. 1 slice whole wheat bread

  2. 1 tbsp. butter

  3. 1 shallot, minced

  4. 2 garlic cloves, minced

  5. 2 tbsp. flour

  6. 2 cups skim milk

  7. 1/2 tsp. salt

  8. 1/4 tsp. black pepper

  9. 1/2 cup (2 ounces) smoked Gouda cheese, shredded

  10. 1/3 cup grated Parmesan cheese

  11. 3 cups fresh spinach, chopped

  12. 4 cups cooked elbow macaroni (about 2 cups uncooked)

  1. Preheat oven to 350 degrees F.

  2. Place bread in a food processor and pulse until coarse crumbs form.

  3. Melt butter in a large saucepan over medium heat. Add shallots and garlic, then cook 1 minute. Add flour to the shallots and garlic and cook for about 1 minute, stirring constantly. Gradually pour in the milk, salt and pepper while stirring constantly with a whisk. Bring to a boil and cook until the sauce coats the back of a spoon. Add both cheeses and stir until melted.

  4. Add spinach and cooked macaroni to cheese sauce, stirring until well blended. Spoon mixture into a large casserole dish. Sprinkle with breadcrumbs, then bake at 350° for 15 minutes or until bubbly.<
