  1. 2 Broiler-fryer chickens

  3. 3 lbs. Each 16 pieces

  4. of chicken

  5. 3 1/2 ts Salt, divided

  6. 1 md Lemon, juice of

  7. 1 c Flour

  8. 1 ts Paprika

  9. 1/8 ts Pepper

  10. Cooking oil

  11. 2 tb Water

  1. Place chicken pieces in a large bowl; add 3 tsp.

  2. salt, lemon juice and enough water to cover chicken.

  3. Soak in refrigerator overnight.

  4. Drain thoroughly.

  5. In a paper bag, combine flour, paprika, pepper and remaining salt.

  6. Toss chicken pieces in flour; shake off excess.

  7. Heat about 1/2" of oil in a large skillet.

  8. When hot, carefully add chicken and brown lightly on all sides, about 20 minutes.

  9. Reduce heat.

  10. Add water; cover and cook until tender, about 20 minutes.

  11. Uncover and cook until chicken is crisp, about 10 minutes.
