  2. CLASSIC MINESTRONE SOUP CON PESTO ALLA GENOVE

  7. 3 tb Olive oil

  8. 2 Onions, diced

  9. 2 Carrots, chopped

  10. 2 Leeks, whites only chopped

  11. 2 Stalks celery, chopped

  12. 2 Potatoes, diced

  13. 1 c Dry beans

  14. - soaked and cooked

  15. - but still hard

  16. 1 Large eggplant

  17. - skinned and diced

  18. 2 c Hot chicken broth

  19. 4 c Boiling water

  20. Salt and pepper

  21. 2 Tomatoes, diced

  22. 1 1/2 c Cabbage, diced

  23. 1 1/2 c Spinach, diced

  24. 1 1/2 c Zucchini, diced

  25. 3/4 c Pasta, raw

  26. 3 tb Pesto, heaping

  27. --PESTO--

  28. 1 1/2 c Fresh basil leaves

  29. 1 Garlic clove

  30. Parmesan or romano cheese

  31. 3 tb Pine nuts or walnuts

  32. 1/2 c Olive oil

  33. In olive oil saute till soft onions, leeks, carrots,

  34. celery, and potatoes. Add dry beans, eggplant and cook

  35. down. Add chicken broth, water, salt, pepper,

  36. tomatoes and cook for about 1 hour covered. Add

  37. cabbage, spinach, zucchini. Add pasta. If too thick

  38. add more chicken broth. When done add pesto sauce.
