  1. VEGETARIAN "CHICKEN" SOUP (For Passover)

  2. 7 carrots

  3. salt and pepper

  4. 1 pinch safflower "saffron",

  5. 1 large onion, with one clove inserted

  6. 2 large parsnips

  7. 7 cloves garlic

  8. 1 potato, quartered

  9. 5 stalks celery

  10. 1 bottle semi-sweet wine

  11. 1/2 bunch parsley

  12. 1 bunch fresh dill

  13. Fill a big soup pot with water. Add the onion, carrots, parsnip,

  14. salt and pepper , garlic. Bring to boil and then simmer for 1/2

  15. hour. Add potato, celery and wine and simmer 1/2 hour. Add parsley

  16. and dill and simmer 15 minutes. Add more salt a nd pepper to taste.
