  1. 4 to 6 chicken breast halves

  2. salt and pepper

  3. garlic powder

  4. 1 tablespoon olive oil

  5. 1 tablespoon butter

  6. 2-3 tablespoons Marsala or white wine, or chicken broth

  7. 4-6 green onions, thinly sliced

  8. 8 oz Mozzarella cheese, sliced

  1. Pound chicken breast halves between sheets of plastic wrap, until evenly thinned out.

  2. Salt and pepper both sides and sprinkle lightly with garlic powder.

  3. In large skillet, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat.

  4. Add chicken; cook for aprox.

  5. minutes on each side.

  6. Remove to a baking dish.

  7. Add 1 more tablespoon of butter to skillet, with wine or broth, then saute mushrooms until tender & golden brown.

  8. Pour mushroom mixture over chicken in baking dish.

  9. Top with sliced green onions; Place Mozzarella slices over all Bake at 325 for 25 minutes
