  2. 1 1/2 lb large raw shrimp

  3. 1/2 c all-purpose flour

  4. 1/2 c cornstarch

  5. 1 T salt

  6. 1/2 T white pepper

  7. 2 T vegetable oil

  8. 1 c ice water

  9. oil for deep frying

  10. 2 c short shredded coconut

  11. 1/2 c orange marmalade

  12. 1/4 c Grey Poupon country mustard

  13. 1/4 c honey

  14. 4 drops Tabasco sauce or 3 drops

  1. Peel, devein and wash shrimp. Dry well on paper towels. Set aside.

  2. In a bowl, mix all dry ingredients for batter. Add 2T oil and ice water.

  3. Stir to blend. To fry: heat oil to 350 in deep fryer or electricskillet. Spread coconut on a flat pan a little at a time, addingmore as needed. Dip shrimp in batter, then roll in coconut.

  4. Fry in hot oil until lightly browned, about 4 minutes.

  5. Bake at 300 5 minutes to finish cooking of the shrimp.

  6. Serve with sweet and sour sauce or the following sauce: Combinemarmalade, Grey Poupon mustard, honey and Tabasco sauce to taste.
