  1. 1 1/2 pounds Italian green beans, fresh, frozen or canned (or regular green beans)

  2. 1 small red onion, thinly sliced

  3. 3/4 cup mushrooms, thinly sliced

  4. 1/2 to 3/4 cup Italian dressing

  5. 1 cup fresh tomatoes, seeded and chopped Parmesan cheese, freshly grated

  1. Prepare and cook beans. Mix onion, mushrooms, and dressing with beans. Cook over medium heat until onion is tender, about 3 minutes. Top with tomatoes. Sprinkle on a little Parmesan cheese, if desired.
