  1. 1 can (15 ounces) diced beets, rinsed and well drained

  2. 1 can (15 ounces) black beans, rinsed and drained

  3. 1 can (11 ounces) whole kernel corn, drained

  4. 2/3 cup diced red onion

  5. 1/2 cup diced sweet red pepper

  6. 3 to 4 tablespoons minced fresh cilantro

  7. 3 tablespoons olive oil

  8. 3 tablespoons red wine vinegar

  9. 1/2 teaspoon salt

  10. 1/4 teaspoon pepper

  1. In a large bowl, combine all of the ingredients. Cover and refrigerate for at least 2 hours before serving. Yield: 6 servings.
