  1. 1/2 cup 118ml Extra virgin olive oil

  2. 1/2 cup 118ml Canola oil

  3. 4 Garlic - peeled and 4 tablespoons 60ml Balsamic vinegar

  4. 8 sections Fresh thyme

  5. 8 sections Fresh oregano

  6. 18 sections Shiitake mushroom caps (large)

  7. 6 Generous handfuls of mixed

  8. Greens

  9. Salt and freshly ground

  10. Pepper

  1. In a shallow bowl, mix together oils, garlic and 2 tablespoons of vinegar. Crush the herbs gently between fingers to release flavor, and add to marinade.

  2. Marinate for 1 hour.

  3. Heat grill to medium. Lightly salt and pepper mushrooms and grill them gill side down for 2 to 3 minutes more.

  4. Strain marinade and add the remaining vinegar. Season to taste. Add mixed greens and mushrooms, toss lightly to coat and serve immediately.
