  2. 1 tbsp. vegetable oil

  3. 1 small onion, peeled and chopped

  4. 1 cup chopped green bell pepper

  5. 8 ounces kielbasa sausage, halved lengthwise and sliced

  6. 14 1/2 ounce can stewed tomatoes

  7. 1 1/2 cups water

  8. 1 tsp. Creole seasoning

  9. 2 cups uncooked quick cooking rice

  10. dash tabasco sauce

  1. Heat vegetable oil in a large skillet over medium heat. Add onion and bell pepper. Cover and cook about 5 minutes, stirring once, until vegetables are tender. Stir in kielbasa, stewed tomatoes, water and Creole seasoning. Heat to a boil. Stir in rice and return to a boil. Reduce heat and simmer about 5 minutes until rice is tender. Add tabasco sauce and fluff rice with a fork. Serve immediately.
