  1. 1 Chicken - whole roaster

  2. 1/2 Cup Lemon Pepper Seasoning

  3. 1 small onion or Potato

  4. 1/4 Cup Olive Oil

  5. 1 Can Beer at room temperature

  1. Preheat the grill to 325. While grill is heating, generously rub inside cavity of chicken and outside skin with lemon pepper. Carefully loosen the skin and apply seasonings around the breast and thigh areas (and where ever you can get a pocket.) Pour out half the beer into a glass and reserve. Place approximately 2 tablespoons of lemon pepper seasoning into the beer. It will foam a little, wait until that settles and then carefully add the reserved beer until almost full again. If using a beer can stand, place beer in stand and place chicken on stand. Take onion or potato and place in neck cavity to act as a seal. I like to place the stand on a disposable pie plate in the grill. Positioning the chicken on a pie plate is also doable so it will stand. Lightly brush periodically through out cooking with olive oil. Chicken is done when juices run clear and the skin is really nicely dark and crispy. Yield: serves 4 Notes: We prepare this chicken camping and it is always a huge hit. The lemon pepper gives it a great flavor and the prepartion could hardly be any easier.
