  1. 1 C fresh cranberries

  2. 1 C coarsely chopped peeled cooking apple

  3. 1/2 C water

  4. 1/4 C onion (chopped)

  5. 1 T minced peeled fresh ginger

  6. 1 t curry powder

  7. 2 ( 3/4 lb) pork tenderloins

  8. 1/4 t salt

  9. 1/4 t pepper cooking spray

  1. Preheat 350 Combine first 8 ingredients in a small saucepan; bring to boil. Cover, reduce heat, and simmer 20 minutes. Uncover; simmer 2 minutes or until thick. Cool 10 minutes. Place in blender or food processor, and process until smooth. Divide sauce in half. Trim fat from pork; sprinkle with salt and pepper. Brush pork with half of sauce. Place pork in broiler pan coated with cooking spray. Bake at 350 for 30 minutes or until thermometer reaches 160. Serve pork with remaining sauce.
