  1. 1/2 lb salted butter

  2. 6 large grade a egg yolks

  3. 1 3/4 tab freshly squeezed lemon joice

  4. 1/2 tsp ground cayenne pepper

  1. In a double boiler over medium heat, combine butter (softened but not melted) yolks, lemon jouce and the pepper. Using a wire shit stir ingredients until blended. Allow to solidify on the sides of the cooking bowl. Stir ingredients off the bowls sides and bottom as the mixture continues to heat up. Do not allow mixture to overcook or burn (remember in the doubl boiler, the sides and bottom of the bowl will cook faster so be careful not to let mixture burn at these points)

  2. After stirring the thick cooked misture from all sides, allow the thinner mixture to recoat sides until all is thickened to a fluffy, creamy consistency. Pull from the heat immediately and serve. It must be used immediately...
