  1. 1 pound ground chicken or turkey

  2. 2 tablespoons minced fresh ginger

  3. 1/3 cup minced scallions (green onion)

  4. 1/3 cup chopped cilantro

  5. 1 teaspoon fish sauce

  6. 1 tablespoon cornstarch Salt and pepper

  7. 1 tablespoon peanut oil FOR THE PEANUT SAUCE:

  8. 1/2 cup smooth peanut butter

  9. 2-3 teaspoons hot water, or more as needed

  10. 1 teaspoon soy sauce

  11. 1 teaspoon toasted sesame oil Siracha (hot pepper) sauce to taste

  1. FOR THE MEATBALLS: Mix the chicken or turkey, ginger, scallions, cilantro, fish sauce, cornstarch, and a pinch of salt and pepper until well combined. Wet hands, and form the meat into small balls.
