  1. 1/2 cup cake flour

  2. 1/3 cup unsweetened cocoa

  3. 1/4 tsp. baking soda

  4. 1/4 tsp. baking powder

  5. 2/3 cup sugar

  6. 1/4 cup Smart Balance Buttery Spread

  7. 2 large Smart Balance Eggs

  8. 1/2 cup Smart Balance Sour Cream

  9. 1 Tblsp. vanilla extract

  10. 1/2 cup Smart Balance creamy peanut butter

  11. 1-1/2 Tblsp. Smart Balance Buttery Spread

  12. 1/2 cup confectioner's sugar

  13. 1 banana

  1. Description: New twist on an old favorite. Fluffy peanut butter filling and banana sandwiched between slices of chocolate cake. STEP 1: 1. Line the bottom of an 8.5 x 4.5 loaf pan with parchment paper. Lightly grease and flour the paper and sides of the pan. Preheat oven to 350 deg. STEP 2: 2. Combine flour, cocoa, baking soda, and baking powder. STEP 3: 3. In electric mixer, beat sugar and buttery spread until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in sour cream and vanilla. On low speed mix in the dry ingredients just until combined. STEP 4: 4. Pour batter into loaf pan. Bake 35 to 40 minutes until cake tester in center comes out clean. Cool on wire rack. STEP 5: 5. To make filling, beat peanut butter with the 1-1/2 Tblsp. buttery spread. Gradually add the confectioner's sugar and beat until fluffy about 2 or 3 minutes. STEP 6: 6. When the cake is cold, slice into thin slices. Spread about 1 Tblsp. filling on half the slices. Place 2 thick slices of banana on each "buttered" slice. Top with the remaining slices. Cut each sandwich in half and serve immediately with a large cold glass of Smart Balance Milk.
