  1. 1/2 pound of butter or margarine 1-cup granulated sugar

  2. 1 egg , separated

  3. 2 cups flour , sifted

  4. 2 times with cinnamon

  5. 2 tsp. cinnamon

  1. Cream together butter/margarine & sugar; beat in egg yolk until incorporated into the mixture. Add flour/cinnamon mixture into creamed butter mixture a little at a time until dough forms. **Note** this next step can be done 2 ways… First way: Roll out dough on a lightly floured surface, thinly; cut into small circles, dredge in granulated sugar & place on a un-greased cookie sheet. Beat egg white until foamy but not stiff & brush lightly over the tops. Bake in a 350-degree oven for 8 to 10 minutes. Second way: Roll dough into small balls, press with the bottom of a glass, mark with the tongs of a fork, dredge in granulated sugar, place on an un-greased cookie sheet, brush tops with egg white & bake as above.
