  1. 1 large mango

  2. 200g natural fromage frais

  3. 1-2 tablespoons honey

  1. Cut the mango in half. Cut out the 'cheeks' of each half and set them aside.

  2. Put one half of the mango in a blender and blend so it becomes a puree.

  3. Place the mango puree in a bowl. Add the fromage frais and fold together gently. You could add honey to sweeten it if you like. The combination should look a white/very pale apricot colour with swirls of orange.

  4. Now cut the other part of the mango into small chunks. Put a layer of the mango chunks in a serving glass. Spoon a layer of the fromage frais mixture on top. Keep adding mango and fool until the glass is full and there are mango pieces on top.

  5. Enjoy at once or chill with cling film covering it!
