  1. 1 (15 1/2-oz) can pinto bean s, rinsed and drained

  2. 2 tbsp fat-free mayonnaise

  3. 1 tsp grated lime zest

  4. 1 tbsp lime juice

  5. 2 tsp olive oil

  6. 1 garlic clove, peeled

  7. 3/4 tsp ground cumin

  8. 1/4 tsp salt

  9. 1 tbsp chopped parsley or cilantro

  10. 3 c assorted cut-up vegetable s

  1. Combine the beans, mayonnaise, zest, lime juice, oil, garlic, cumin, and salt in a food processor and puree. (Add the tablespoon or 2 of water if the dip seems too thick to spread easily.) Transfer the dip to a serving bowl, sprinkle with the parsley, and serve with the vegetables.
