  1. Thai Iced Tea 0 1/2 c thai tea 3 c water

  2. 14 oz sweetened condensed milk

  3. 1 1/2 c evaporated milk or Half-and-half

  4. Put the tea in a bag made of fine cloth. Bring the water to a

  5. rapid boil, pour it over the tea, and let it steep for 3 min. Pour

  6. the liquid back through the tea 5 or 6 times until it is a deep

  7. orange color and is flavored strongly.

  8. Strain the tea well, pressing out all the liquid that you can.

  9. Add the sweetened condensed milk to the warm liquid and mix it

  10. well. Allow the mixture to cool to room temp.

  11. Just before serving, fill each glass with ice and fill it half to

  12. three quarters full of tea. Add evaporated milk or half-and-half

  13. to fill the glass, and stir well.

  14. VARIATION: If you prefer a darker colored and stronger flavored

  15. tea, substitute 3/4 cup granulated sugar for the sweetened condensed

  16. milk.

  17. (Thai Coffee is prepared the same way substituting coffee for the

  18. tea.)

  19. Thai tea can be purchased in oriental food markets. It comes in

  20. one pound cellophane packets.
