  1. - 1 box manicotti

  2. 1 lb. ricotta cheese

  3. 1 egg

  4. 1 tsp. sugar

  5. A pinch of salt & pepper

  6. 1 tsp. parsley

  7. Pasta sauce (homemade or jarred)

  1. In a mixing bowl, combine ricotta, egg, salt, pepper, sugar and parsley. Mix well.

  2. Par boil manicotti until semi-soft. Carefully stuff manicotti with ricotta mixture.

  3. In a glass baking pan, spread a thin layer of sauce on bottom. Lay manicotti side by side, 1/4″ apart. Top manicotti with more sauce and top with Mozzarella.

  4. Bake at 350 degrees for about 30 minutes. Serves 6 to 8.
