  1. 1 tablespoon vegetable oil

  2. 1 cup onion, chopped

  3. 2 cloves garlic, minced

  4. 2 cups chicken broth or water

  5. 6 ounces cooked Appaloosa beans

  6. 1 1/2 cups canned or frozen corn kernels, drained

  7. 2 teaspoons chopped fresh sage

  8. 1/2 teaspoon salt

  9. 1/4 teaspoon ground black pepper

  1. In a large saucepan over medium heat, heat oil; add onion and garlic, cook for about 5 minutes or until vegetables are tender.

  2. Stir in broth, beans, corn and sage. Cook about 10 to 15 minutes or until mixture is heated through. Stir in salt and pepper.
