  1. 1/2 cup light (low-sodium) soy sauce

  2. 1/2 cup mirin

  3. 1/4 cup sugar

  4. 1 to 2 tablespoons water

  1. Combine soy sauce, mirin, and sugar in a small saucepan over high heat. Bring to a boil, stirring constantly until the sugar dissolves. Allow mixture to reduce over high heat until it reaches a syrupy consistence, about 5 to 6 minutes. Remove from the heat and stir in the water. Cool to room temperature.

  2. Yield : about 1/2 cup
