  1. 1 cup 62g / 2 1/5oz White flour

  2. 1/3 cup 53g / 1.9oz Brown sugar

  3. 1 teaspoon 5ml Cinnamon

  4. 1/2 teaspoon 2 1/2ml Baking powder

  5. 1/4 teaspoon 1 1/3ml Salt

  6. 1 1/2 cups 355ml Dried apricots

  7. 1 tablespoon 15ml Walnuts - chopped

  8. 1 tablespoon 15ml Cashews - chopped

  9. 1/3 cup 109g / 3.8oz Maple syrup Icing

  10. 1 cup 198g / 7oz Icing sugar

  11. 2 tablespoons 30ml Shortening

  12. 1/2 teaspoon 2 1/2ml Vanilla

  13. 1 tablespoon 15ml Apple juice

  1. Recipe Instructions Sift together flour, sugar, cinnamon, baking powder and salt. Stir in the apricots and nuts. Add the syrup. Stir until the mixture forms a thick batter. Spread the batter into a lightly oiled 8" X 8" baking pan (it is hard work, but it will cover -- trust me!). Bake at 350F for 30 to 35 minutes or until the bars test done. Allow to cool slightly, cut into bars. When completely cool, spread with icing and drizzle some melted chocolate over the top if desired. ICING: Cream together sugar and shortening. Add remaining ingredients and beat until smooth. Makes 1/2 cup.
