  1. 4 Boneless skinless chicken breasts - (4 - 5 oz)

  2. 1 Garlic clove - crushed

  3. 1/2 teaspoon 2 1/2ml Oregano

  4. 1/2 teaspoon 2 1/2ml Black pepper - fresh ground

  5. 2 teaspoons 10ml Zucchini squash - sliced (medium)

  6. 1 teaspoon 5ml Green pepper - cut in strips (medium)

  7. 1/2 cup 118ml Low sodium chicken broth

  8. 3 tablespoons 45ml Lemon juice

  9. 1 tablespoon 15ml White wine

  1. Place chicken in a casserole dish. Top with the garlic, other seasonings, and the vegetables. Pour in broth, lemon juice and wine. Cover tightly and bake at 350 degrees for 30 minutes or until chicken is cooked through.
