  1. 1/2 cup 118ml Soy sauce

  2. 1/3 cup 78ml Honey

  3. 1 tablespoon 15ml Brown sugar

  4. 1 oz 28g Minced ginger

  5. 1 tablespoon 15ml Minced garlic

  6. 1 tablespoon 15ml Minced shallots

  7. Juice of one orange

  8. 1/2 lb 227g / 8oz Butter - cut into cubes

  9. Salt - to taste

  10. Freshly-ground black pepper - to taste

  1. In a sauce pot, combine the soy sauce, honey, brown sugar, ginger, garlic and shallots together. Bring the liquid up to a boil and simmer the liquid for 5 to 6 minutes, or until the sauce is dark in color and reduced by half. Remove from the heat and mount in the butter cubes. Stir in the orange juice and strain through a chinoise. Season with salt and pepper.

  2. This recipe yields about 1 1/2 cups.
