  1. 1 5lb sack of red or white potatoes

  2. 10 hot dogs

  3. 1/2 stick margarine melted

  4. 1/2 cup flour

  5. 2 cups milk

  6. 1-cup cheddar cheese cubed

  1. Peel and cut up potatoes, cook in a pan of water until fork tender (about 15 to 20 minutes). Slice hot dogs and cook in water until tender. (You can cook both in the same pan if it is big enough). In a separate bowl melt butter, add flour and mix until it is a paste. Add milk and cheese. Microwave on high for 5 minutes. Take out and stir with a wire whisk until smooth. If too thick add a little more milk, if to thin add a little more cheese and microwave again for 2 minutes to melt cheese.

  2. When potatoes and hot dogs are done drain and pour into a 4 qt baking dish. Pour the cheese sauce over the potatoes & hot dogs and mix. Bake at 350° for 30 minutes. Yield: serves 8 Notes: This is another of my kids' favorite. It's inexpensive and easy to make. When I had my day care license this was one dish that the kids used to ask to have for lunch. This dish my mother used to cook when I was little.
