  2. 2 1/2 cups coriander seeds

  3. 1 1/2 cups red chiles

  4. 1/2 cup black peppercorns

  5. 3/4 cup red gram dal -- (pigeon peas-toor dal)

  6. 4 tablespoons Bengali gram dal --

  7. 1/2 tablespoon cumin seeds

  8. 1 teaspoon ground turmeric

  9. 1 small bunch curry leaves

  1. Rinse and pick over the dal.

  2. In a heavy saucepan, dry-roast all the ingredients separately, until they each give off a strong aroma. (However do not roast the Ground turmeric.)

  3. Place all the ingredients in an electric blender or food processor. Blend into a fine powder.

  4. Store in an airtight container and use as required.

  5. Makes 15 ounces.
