  5. 1/3 c Bulgur

  6. 2 ts Olive oil

  7. 4 c Onion (s), sliced (4 med)

  8. 2 ts Sugar

  9. 2 ts Balsamic vinegar

  10. Salt to taste

  11. 3/4 lb Lean ground beef

  12. 2 tb Tomato paste

  13. 1/4 c Parsley, chopped

  14. 1/4 ts Black pepper

  15. 4 Hamburger buns

  16. Split and toasted

  17. Lettuce

  18. In a small bowl, combine the bulgur with 1/2 cup warm

  19. water; let stand for 30 min, or until the bulgur is

  20. tender and the water is absorbed.

  21. In a large non-stick skillet, heat oil over low heat.

  22. Add onions and sugar; saute until the onions are

  23. 15 min. Stir in

  24. 1/4 cup

  25. water and vinegar. Season with salt and keep warm.

  26. Prepare the grill or preheat the broiler. In a medium

  27. bowl, combine the bulgur, beef, tomato paste, parsley,

  28. 1/2 tsp salt and pepper; mix thoroughly but lightly.

  29. Shape into four 3/4-inch-thick patties. Grill over

  30. high heat or broil on a lightly oiled rack until

  31. browned and cooked through, about 5 min per side. Blot

  32. the patties with paper towels. Place each patty on a

  33. bun, top with the caramelized onions and garnish with

  34. lettuce.
