  1. 2 lbs 908g / 32oz Catfish fillets

  2. 1/2 teaspoon 2 1/2ml Salt

  3. 1 Black pepper

  4. 2 cups 320g / 11oz Cooked rice

  5. 2 tablespoons 30ml Onion - grated

  6. 1/2 teaspoon 2 1/2ml Curry powder

  7. 6 Lemon slices - thin, seeded

  8. 1/4 cup 49g / 1.7oz Butter or margarine Parsley chopped

  1. Recipe Instructions 1. Thaw fish according to package directions.

  2. Cut fish into serving-size portions; place in a well-greased 13 x 9 x 2-inch baking dish and sprinkle with salt and pepper.

  3. Mix rice, onion and curry powder; spread over fish.

  4. Top with lemon slices and dot with butter.

  5. Cover and bake in preheated 350F oven 25 to 35 minutes or until fish flakes easily.

  6. Uncover last few minutes of cooking to allow for slight browning.

  7. Sprinkle with parsley and serve.
