  1. 1 cup Dry rice

  2. 2 cups Water

  3. 9 larges Eggs cup Grated mozzarella cheese cup Grated cheddar cheese

  4. 1 Zucchini, thinly sliced

  5. 2 cups Skim milk Italian seasonings to taste Dash of pepper

  1. Turn oven on to 425 degrees F. Cook rice in water. Combine cheeses and set aside. To the cooked rice, mix in 1 egg and 2 Tbl. cheese. Press into 9" X 13" pan to form curst. Bake 5 minutes. Turn oven down to 350 degrees F. In seperate bowl, lightly beat remaining eggs with milk and add seasonings. Arrange layer of zucchini over baked crust. Pour in egg mixture. Top with cheese.
