  2. 2 tablespoons olive oil

  3. 1 small white onion, sliced

  4. 1 clove garlic, minced

  5. 3 medium zucchini, sliced

  6. 1 large red bell pepper, chopped

  7. 2 medium tomatoes, peeled and chopped

  8. 4 anaheim chiles, roast, peel, seed and chop

  9. 1/2 teaspoon salt

  10. 1/2 teaspoon freshly ground black pepper

  11. 1 teaspoon crushed dried oregano

  12. 1 tablespoon chopped fresh parsley

  13. 1/4 cup crumbled feta cheese

  1. Heat the oil in large saute pan.

  2. Add the onion, garlic, zucchini and bell pepper.

  3. Saute for 4 to 5 minutes.

  4. Add the tomatoes, chile, salt, pepper, oregano and parsley.

  5. Cover the pan and simmer for 6 to 7 minutes or until the zucchini is tender.

  6. Serve topped with a small amount of feta cheese crumbled over each serving.

  7. This is a smashing summer dish served with very thin slices of roast pork. To add an extra splash of color, spoon the zucchini, tomatoes, and chile mixture into a radicchio leaf.
