  1. Eight-layer Casserole

  2. Makes 4 or 5 servings.

  3. 1/2 pound lean ground beef

  4. 3 cloves garlic, chopped

  5. 1 small onion, chopped

  6. 1 (15-oz.) can tomato sauce

  7. 1/2 cup water

  8. 1/2 teaspoon chili powder

  9. 1/4 teaspoon salt

  10. 1/4 teaspoon ground black pepper

  11. 2/3 cup long-grain rice

  12. 1 (8 3/4 oz.) can whole-kernel corn, drained

  13. 1/2 cup chopped bell pepper

  14. Crumble ground beef evenly over bottom of a 3 1/2-quart slow cooker.

  15. Sprinkle with garlic, then onion. In a medium bowl, combine tomato

  16. sauce, water, chili power, salt, and black pepper; pour half over

  17. beef and onion layers. Sprinkle rice evenly over top, then corn.

  18. Top with remaining tomato sauce mixture, then bell pepper. Cover

  19. and cook on LOW about 5 hours or until rice is tender.
