  1. 1 cup 237ml Idaho potatoes - (see note)

  2. 1/4 cup 15g / 1/2oz Grated onion

  3. 2 Eggs - well beaten

  4. 1 teaspoon 5ml Kosher salt

  5. 1 Pepper to taste

  6. 4 tablespoons 60ml Melted margarine - divided

  7. 2 tablespoons 30ml Matzoh meal - (additional for dusting)

  1. NOTE: To make potatoes easier to handle, parboil them for 10 minutes~ and then plunge them into cold water, then immediately drain. Pat dry and grate.

  2. Preheat oven to 375F.

  3. Combine all ingredients (reserving 2 tb of margarine) Grease 24 mini muffin cups with the remaining margarine and dust with the additional matzah meal.

  4. Place one tablespoon of mixture in each muffin cup and bake 25 minutes until golden.
