  1. 4 portabella mushrooms

  2. 5 tablespoons teriyaki sauce, divided

  3. 1 tablespoon olive oil

  4. 1/2 cup mayonnaise

  5. 1/2 teaspoon finely chopped garlic

  6. 1 medium red onion, thickly sliced

  7. 1 large green bell pepper, seeded and cut in strips

  8. 4 split and toasted sesame kaiser rolls or sandwich-sized English muffins

  1. Preheat oven to 450 degrees F. Remove portabella stems. With side of spoon, scoop gills from mushrooms; discard. In a small bowl, combine 1 tablespoon of the teriyaki sauce with olive oil; set aside. In another small bowl, combine mayonnaise, the remaining 4 tablespoons of the teriyaki sauce and garlic; set aside.

  2. Arrange mushroom caps (gill side down), onion and pepper on a broiler pan. Brush teriyaki-oil mixture over vegetables. Roast in center of oven until vegetables are tender, about 15 minutes.

  3. Spread teriyaki mayonnaise on cut sides of rolls. On each roll half, arrange portabella, onion and pepper. Cover with tops of rolls.
