  1. 2 tablespoons vegetable oil

  2. 1/2 ounce dried shiitake mushrooms, soaked, drained, and chopped

  3. 1 green onion, minced

  4. 1 clove garlic, minced

  5. 1 cup chopped water chestnuts

  6. 1/2 cup shredded carrots

  7. 1 tablespoon dry sherry Salt and pepper to taste

  8. 3 cups hot cooked rice

  1. In a large skillet over medium heat, heat oil; add mushrooms, green onion, garlic, water chestnuts, and carrots. Cook until carrots are crisp-tender, about 3 to 5 minutes.

  2. Stir in sherry; season to taste with salt and pepper. Stir mixture into hot cooked rice; toss well to combine.
