  1. 1 1/3 cups all purpose flour

  2. 1/2 tsp. baking soda

  3. 1/4 tsp. salt

  4. 3/4 cup sugar

  5. 1/4 cup dark brown sugar

  6. 1/2 cup butter, room temperature

  7. 1 large egg

  8. 1 tsp. vanilla extract

  9. 1 1/4 cups extra chunky peanut butter

  1. Whisk together the flour, baking soda and salt in a small bowl. Combine both sugars and butter in a large bowl and beat until fluffy. Beat in the egg and vanilla. Add the peanut butter and beat until well blended. Add the flour mixture and stir until combined. Cover the dough and refrigerate at least 1 hour.

  2. Preheat the oven to 325 degrees. Using your hands, shape the dough into 1 inch balls. Place the dough balls 1 inch apart on 2 large ungreased sheet pans. Using the tines of a fork, flatten each dough ball to form a 1 3/4 inch round. Bake the cookies about 15 minutes until golden. Let the cookies cool 5 minutes on the pans. Transfer the cookies to racks and cool completely. Store the cookies in an airtight container at room temperature.
