  1. 1 tub Nordica 1% Cottage Cheese

  2. 1 cup Gay Lea Light Sour Cream

  3. 2 eggs, lightly beaten

  4. 1/3 cup liquid honey

  5. 1/4 cup Gay Lea Salted Butter, melted

  6. 1-1/2 cups Bran Cereal Flakes

  7. 2 cups all purpose flour

  8. 1 tbsp baking powder

  9. 1 tsp cinnamon

  10. 1 tsp orange zest

  11. 1/2 tsp baking soda

  12. 1/2 tsp salt

  13. 1 cup grated carrot

  14. 1/2 cup golden raisins

  15. 1 tbsp granulated sugar (topping Optional)

  16. 1/2 tsp cinnamon (topping Optional)

  17. Instructions :

  18. 1% Cottage Cheese, Gay Lea Sour Cream, eggs, honey and Gay Lea Salted Butter until smooth. Add bran flakes and mix well; let stand for 10 minutes.

  19. In large bowl, combine flour, baking powder, cinnamon, orange rind, baking soda and salt. Pour cottage cheese mixture over flour mixture and stir until moistened. Add carrots and raisins and stir just until combined. Spoon into greased or paper lined muffin tins.

  20. 375 F (180 C) oven for about 25 minutes or until tester comes out clean. Let cool for 5 minutes in pan on rack before removing.
