  1. 4 each rack of lamb (about 14 ounces each)

  2. 1/4 cup extra virgin olive oil

  3. 2 tablespoons sea salt (Fleur de Sel)

  4. 2 tablespoons freshly ground black

  1. Preparation : Preheat oven to 350 degrees. Rub racks with olive oil, then sprinkle liberally with sea salt and black pepper. In a hot saut pan, sear all sides of the rack, browning evenly. Place in the preheated oven for 20 minutes. Remove racks from the oven and let rest for 10 minutes. Then carve into either individual (8 1-inch thick) or double chops, depending on your taste.
