  1. 1 lb. asparagus spears

  2. 1/4 cup finely chopped almonds

  3. 1/2 cup butter

  4. 1 tsp. tarragon vinegar

  1. Preparation : Instructions : Blanch the asparagus in just enough water to cover for about 3 minutes or until just tender. Drain and set aside. Begin sauce. In a medium saucepan place the almonds and butter. Saut until nuts are lightly browned, about 3 minutes, being careful not to burn. Carefully stir in the vinegar. Pour sauce over asparagus and serve immediately.
