  1. Vegetarian Sandwich 1 can chickpeas

  2. 2 TBS lemon juice

  3. 1 TBS olive oil

  4. 2 TBS tahini (sesame paste)

  5. fresh garlic to taste

  6. salt and black pepper to taste

  7. scallions, cumin, cayenne and/or paprika

  8. Put it all in a blender or food processor and blend until smooth..

  9. Spread hummus on crusty bread with lettuce, tomato, onion, and cucumber. You can also use cream cheese.

  10. Pita pockets are particularly good with hummus.
