  3. 1 lime, juice and zest of (both the juice and the grated peel)

  4. 1 teaspoon Dijon mustard

  5. 1 teaspoon cumin

  6. 1 teaspoon salt

  7. 1 teaspoon pepper

  1. Combine all ingredients in a small bowl.

  2. Rub the mixture into both sides of the ribs.

  3. Place in casserole dish, cover and refrigerate 8 hours to overnight to marinate.
